Rajma burrito:

 

Ingredients

 

For the Rajma Masala Filling:

 

– 1 cup dried kidney beans (rajma), soaked overnight and drained

– 1 onion, chopped

– 2 cloves garlic, minced

– 1 inch ginger, grated

– 1 teaspoon cumin seeds

– 1 teaspoon coriander powder

– 1 teaspoon garam masala powder

– Salt, to taste

– 1 tablespoons oil

– 2 cups water

– Fresh coriander , for garnish

 

For the Burrito:

 

– 1-2  whole wheat  tortillas

– Rajma masala filling

– Chopped coriander

– Diced tomatoes

  1. Make the Rajma Masala Filling: Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle. Add chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent. Add coriander powder, g…

 

– 1/2 cup sliced mushrooms

– 1/2 cup sliced tomatoes

– 1/4 cup fresh basil leaves

– 1 tablespoon olive oil

– Salt and pepper to taste

– 1 tsp of mayonnaise // 1 thin slice of cheese (optional)

 

Instructions:

 

  1. Preheat a grill or grill pan to medium-high heat.
  2. In a small bowl, whisk together olive oil, salt, and pepper.
  3. Brush the mixture onto both slices of bread.
  4. Top one slice of bread with sliced mushrooms, tomatoes, and basil leaves.
  5. If using cheese, sprinkle it on top of the mushrooms.
  6. Place the other slice of bread on top to create a sandwich.
  7. Grill the sandwich for 2-3 minutes on each side, or until the bread is toasted and the cheese is melted (if using).
  8. Serve immediately and enjoy!
