Ingredients
For the Rajma Masala Filling:
– 1 cup dried kidney beans (rajma), soaked overnight and drained
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 inch ginger, grated
– 1 teaspoon cumin seeds
– 1 teaspoon coriander powder
– 1 teaspoon garam masala powder
– Salt, to taste
– 1 tablespoons oil
– 2 cups water
– Fresh coriander , for garnish
For the Burrito:
– 1-2 whole wheat tortillas
– Rajma masala filling
– Chopped coriander
– Diced tomatoes

Instructions

– 1/2 cup sliced mushrooms
– 1/2 cup sliced tomatoes
– 1/4 cup fresh basil leaves
– 1 tablespoon olive oil
– Salt and pepper to taste
– 1 tsp of mayonnaise // 1 thin slice of cheese (optional)
Instructions:
- Preheat a grill or grill pan to medium-high heat.
- In a small bowl, whisk together olive oil, salt, and pepper.
- Brush the mixture onto both slices of bread.
- Top one slice of bread with sliced mushrooms, tomatoes, and basil leaves.
- If using cheese, sprinkle it on top of the mushrooms.
- Place the other slice of bread on top to create a sandwich.
- Grill the sandwich for 2-3 minutes on each side, or until the bread is toasted and the cheese is melted (if using).
- Serve immediately and enjoy!
