Clear Vegetable Soup:

Basic Recipe – 2 Big Bowls

Ingredients – All Low FODMAP + Low Acid

1/2 cup lauki, peeled & diced

1/2 cup tinda or tori, diced

1/4 cup beans, small dice – optional, skip

1/2 inch grated adrak – anti-inflammatory, easy on gut

2-3 drops ghee  or 1/2 tsp olive oil

1/2 tsp jeera + pinch haldi + black salt

3 cups water or homemade

veg stock

Dhaniya for garnish

Steps – 15 min

Tadka: Heat ghee. Add jeera, let it crackle.

Add adrak, sauté 10 sec , onion/garlic

Boil: Add all diced veg + haldi + salt.

Add 3 cups water.

Cover & simmer 10-12 min till soft.

Strain:

For “clear” soup, strain through fine chhalni.

Press veg lightly.

Keep the clear liquid.
