Boiled Egg White Salad

2 servings
egg whites, hard boiled = from 4 whole eggs
1/2 kheera, peeled + deseeded + cubed small
1/4 cup boiled lauki, cubed = extra cooling
1 tsp ghee
1/2 tsp jeera powder roasted
Pinch haldi + black salt + hing pinch
Dhaniya + pudina 3-4 leaves chopped
1/4 tsp grated adrak optional
Steps – 5 min
Boil: Eggs 10 min. Cool, remove yolk. Chop whites roughly.
Prep veg: Peel + deseed kheera.
Boil lauki 4 min till soft.
Cool.
Tadka: Heat ghee 10 sec. Off flame.
Add hing + haldi + jeera powder.
Smells good, no gas.
Mix: Bowl mein egg whites + kheera + lauki + tadka + black salt + adrak + dhaniya.
Toss gently.Eat fresh: Don’t keep >1 hour.
