Corn soup:
Ingredients
- Corn: 2 cups corn kernels (fresh or frozen)
- Onion: 1 medium-sized onion, chopped
- Garlic: 2 cloves, minced
- Butter or oil: 2 tablespoons
- Salt and pepper: To taste
Instructions
- Sauté onions and garlic: Heat butter or oil in a pot and sauté chopped onions and garlic until softened.
- Add corn and potato: Add corn kernels and veggies and cook for a few minutes.
- Add broth: Pour in vegetable broth and bring to a boil.
- Simmer: Reduce heat and simmer until the corn is tender.
- Blend: Blend the soup until smooth.
- Season: Season with salt and pepper to taste.
