Corn soup:

 

Ingredients

  1. Corn: 2 cups corn kernels (fresh or frozen)
  2. Onion: 1 medium-sized onion, chopped
  3. Garlic: 2 cloves, minced
  4. Butter or oil: 2 tablespoons
  5. Salt and pepper: To taste

 

Instructions

  1. Sauté onions and garlic: Heat butter or oil in a pot and sauté chopped onions and garlic until softened.
  2. Add corn and potato: Add corn kernels and veggies and cook for a few minutes.
  3. Add broth: Pour in vegetable broth and bring to a boil.
  4. Simmer: Reduce heat and simmer until the corn is tender.
  5. Blend: Blend the soup until smooth.
  6. Season: Season with salt and pepper to taste.
