Ingredients

  1.    1. 1 cup flattened rice (poha)
  2. 1/2 cup mixed vegetables (onions, tomatoes ( not at night))
  3. 1 tablespoon oil
  4. 1 teaspoon mustard seeds
  5. 1 teaspoon cumin seeds
  6. 1/2 teaspoon turmeric powder
  7. Salt to taste
  8. Fresh coriander for garnish
  9. Lemon juice (optional)

Instructions1. Rinse the poha and soak it in water for 5 minutes. Drain and set aside.

  1. Heat oil in a pan and add mustard seeds and cumin seeds.
  2. Add mixed vegetables and sauté until they’re tender.
  3. Add turmeric powder, salt, and soaked poha. Mix well.
  4. Garnish with fresh coriander and a squeeze of lemon juice (if desired but not at night).
