High-Protein Soya Chilli Recipe
🥣 Ingredients (Serves 2)
- 1 cup soya chunks (50 g dry)
- 1 tsp olive oil
- 1 onion, sliced
- 1 capsicum, sliced
- 4–5 garlic cloves, minced
- 1 tsp grated ginger
- 1 green chilli, chopped (optional)
- 1 tomato, chopped (optional)
- 1 tbsp low-sodium soy sauce
- 1 tsp vinegar
- 1 tsp red chilli sauce (optional)
- ½ tsp black pepper
- ½ tsp red chilli flakes
- 1 tsp cornflour mixed with 2 tbsp water (optional, for slight gravy)
- Spring onion for garnish
- Salt to taste
👩🍳 Method
- Boil the soya chunks for 5–7 minutes, squeeze out excess water, and rinse.
- Heat oil in a pan. Sauté garlic, ginger, and green chilli.
- Add onion and capsicum. Stir-fry for 2–3 minutes until slightly crunchy.
- Add the soya chunks and cook for another 3–4 minutes.
- Mix soy sauce, vinegar, black pepper, chilli flakes, and tomato (if using). Stir well.
- If you prefer a light gravy, add the cornflour slurry and cook for 1 minute.
- Garnish with spring onions and serve hot.
