*Mango Chia Pudding

*Serves:* 1 | *Prep:* 5 mins | *Set time:* 3 hours or overnight

*Ingredients*
*For Chia Pudding Base:*
1. Chia seeds – 2 tbsp _∼15g_
2. Milk of choice – 1/2 cup _120ml_ → Use skim milk, almond milk, or toned milk for low cal
3. Greek yogurt/dahi – 2 tbsp _30g_ → Adds protein, keeps you full
4. Vanilla extract – 2-3 drops _optional_
5. Stevia/honey – 1/2 tsp _optional, skip for diabetic clients_

*For Mango Layer:*
6. Ripe mango – 1/2 small _∼75g_, pureed
7. Pinch of cardamom/elaichi _optional_

*Toppings:*
8. Chopped mango – 2 tbsp
9. Almonds/pumpkin seeds – 1 tsp _for crunch_

*Method*
1. *Mix*: In a jar/glass, add chia seeds + milk + yogurt + vanilla + stevia. Stir well for 1 min so no lumps.
2. *Set*: Cover and refrigerate for 3 hours or overnight. Chia will absorb liquid and become pudding-like.
3. *Blend*: Puree 1/2 mango with cardamom. Keep it thick.
4. *Layer*: Once chia pudding is set, top with mango puree.
5. *Garnish*: Add chopped mango + seeds on top.
