Kanji Water:
Ingredients1. 2-3 medium-sized r red carrots, peeled and cut into sticks 1-2 beetroot slices
- 1 liter water
- 2 tablespoons mustard seeds (rai)
- 1-2 teaspoons salt
- Optional: Red chili powder or black salt for added flavor
Instructions1. In a large vessel or jar, combine water, carrots, and salt. Let it sit for a day.
- Roast mustard seeds and grind them coarsely.
- Add the ground mustard seeds to the carrot mixture.
- Cover and let it ferment for 3-5 days in a warm place.
- Strain and serve chilled.
