Kanji Water:

 

Ingredients1. 2-3 medium-sized r red carrots, peeled and cut into sticks 1-2 beetroot slices

  1. 1 liter water
  2. 2 tablespoons mustard seeds (rai)
  3. 1-2 teaspoons salt
  4. Optional: Red chili powder or black salt for added flavor

 

Instructions1. In a large vessel or jar, combine water, carrots, and salt. Let it sit for a day.

  1. Roast mustard seeds and grind them coarsely.
  2. Add the ground mustard seeds to the carrot mixture.
  3. Cover and let it ferment for 3-5 days in a warm place.
  4. Strain and serve chilled.
