Healthy Chickpea Salad Recipe
Ingredients:
– 1 cup boiled chickpeas
– 1/2 cup diced cucumber
– 1/2 cup diced bell pepper
– 1/4 cup chopped red onion
– 1/4 cup chopped fresh parsley or basil
– 2 tablespoons lemon juice
– 1 tablespoon olive oil
– Salt and pepper, to taste
Instructions:
- In a bowl, combine chickpeas, cucumber, bell pepper, and red onion.
- Squeeze lemon juice and drizzle olive oil.
- Sprinkle chopped parsley or basil on top.
- Season with salt and pepper to taste.
- Mix well and serve.
