Healthy Chickpea Salad Recipe

Ingredients:

– 1 cup boiled chickpeas

– 1/2 cup diced cucumber

– 1/2 cup diced bell pepper

– 1/4 cup chopped red onion

– 1/4 cup chopped fresh parsley or basil

– 2 tablespoons lemon juice

– 1 tablespoon olive oil

– Salt and pepper, to taste

 

Instructions:

  1. In a bowl, combine chickpeas, cucumber, bell pepper, and red onion.
  2. Squeeze lemon juice and drizzle olive oil.
  3. Sprinkle chopped parsley or basil on top.
  4. Season with salt and pepper to taste.
  5. Mix well and serve.
