Carrot + beetroot Soup Recipe:
Ingredients
- 4-5 large carrots, peeled and chopped +1 beetroot
- 2 tablespoons butter or oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
- Fresh herbs (optional): coriander
Instructions
- Sauté onions and garlic: Heat butter or oil in a pot and sauté onions and garlic until softened.
- Add carrots and broth: Add chopped carrots + beetroot and broth to the pot. Bring to a boil, then reduce heat and simmer until carrots are tender.
- Blend the soup: Blend the soup until smooth.
- Add milk or cream (if using): Mix in milk or cream for a creamier texture.
- Season and serve: Add salt, pepper, and fresh herbs (if using). Serve hot.
