Carrot Soup Recipe:

 

Ingredients

  1. 4-5 large carrots, peeled and chopped +1 beetroot
  2. 2 tablespoons butter or oil
  3. 1 onion, chopped
  4. 2 cloves garlic, minced
  5. 4 cups vegetable or chicken broth
  6. Salt and pepper to taste
  7. Fresh herbs (optional): coriander

 

Instructions

  1. Sauté onions and garlic: Heat butter or oil in a pot and sauté onions and garlic until softened.
  2. Add carrots and broth: Add chopped carrots + beetroot and broth to the pot. Bring to a boil, then reduce heat and simmer until carrots are tender.
  3. Blend the soup: Blend the soup until smooth.
  4. Add milk or cream (if using): Mix in milk or cream for a creamier texture.
  5. Season and serve: Add salt, pepper, and fresh herbs (if using). Serve hot.
