High-Protein Soya Chilli Recipe

🥣 Ingredients (Serves 2)
  • 1 cup soya chunks (50 g dry)
  • 1 tsp olive oil
  • 1 onion, sliced
  • 1 capsicum, sliced
  • 4–5 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 green chilli, chopped (optional)
  • 1 tomato, chopped (optional)
  • 1 tbsp low-sodium soy sauce
  • 1 tsp vinegar
  • 1 tsp red chilli sauce (optional)
  • ½ tsp black pepper
  • ½ tsp red chilli flakes
  • 1 tsp cornflour mixed with 2 tbsp water (optional, for slight gravy)
  • Spring onion for garnish
  • Salt to taste

👩‍🍳 Method

  1. Boil the soya chunks for 5–7 minutes, squeeze out excess water, and rinse.
  2. Heat oil in a pan. Sauté garlic, ginger, and green chilli.
  3. Add onion and capsicum. Stir-fry for 2–3 minutes until slightly crunchy.
  4. Add the soya chunks and cook for another 3–4 minutes.
  5. Mix soy sauce, vinegar, black pepper, chilli flakes, and tomato (if using). Stir well.
  6. If you prefer a light gravy, add the cornflour slurry and cook for 1 minute.
  7. Garnish with spring onions and serve hot.
