Vegetable Rice Bowl:

 

Ingredients:

  1. 1 cup cooked rice (white or brown)
  2. 1 cup mixed vegetables (bell peppers, carrots, broccoli, beans)
  3. 1/2 cup roasted sweet potatoes (optional)
  4. 1/4 cup chopped fresh herbs (cilantro, parsley)
  5. 2 tbsp olive oil
  6. 1 tsp soy sauce or stir-fry sauce
  7. Salt and pepper to taste
  8. Optional: avocado, nuts, or seeds for topping

 

Instructions:

  1. Cook rice according to package instructions.
  2. Sauté mixed vegetables with olive oil and soy sauce.
  3. Assemble the bowl with rice, vegetables, and roasted sweet potatoes (if using).
  4. Garnish with fresh herbs and add toppings (if using)
