🥣 Curd Poha with Tadka
Ingredients – 1 serving
- Poha – ½ cup (about 40 g dry)
- Low-fat curd – ½–¾ cup
- Onion – 2 tbsp, finely chopped
- Cucumber – ¼ cup, chopped
- Coriander – 1 tbsp
- Roasted peanuts – 1 tsp
- Salt – as required
- Roasted cumin powder – ½ tsp
- Lemon juice – 1 tsp
For the tadka
- Oil – ½ tsp
- Mustard seeds – ¼ tsp
- Cumin seeds – ¼ tsp
- Curry leaves – 5–6
- Green chilli – 1, chopped
- Hing – a pinch
👩🍳 Method
- Wash the poha gently and drain. Let it rest for 5–7 minutes.
- Add curd, onion, cucumber, coriander, salt, cumin powder and lemon juice.
- Mix gently without making the poha mushy.
- Heat ½ tsp oil. Add mustard seeds, cumin, curry leaves, green chilli and hing.
- Pour the hot tadka over the curd poha and mix lightly.
- Top with 1 tsp roasted peanuts and coriander.
