🥣 Curd Poha with Tadka

Ingredients – 1 serving

  • Poha – ½ cup (about 40 g dry)
  • Low-fat curd – ½–¾ cup
  • Onion – 2 tbsp, finely chopped
  • Cucumber – ¼ cup, chopped
  • Coriander – 1 tbsp
  • Roasted peanuts – 1 tsp
  • Salt – as required
  • Roasted cumin powder – ½ tsp
  • Lemon juice – 1 tsp

For the tadka

  • Oil – ½ tsp
  • Mustard seeds – ¼ tsp
  • Cumin seeds – ¼ tsp
  • Curry leaves – 5–6
  • Green chilli – 1, chopped
  • Hing – a pinch

👩‍🍳 Method

  1. Wash the poha gently and drain. Let it rest for 5–7 minutes.
  2. Add curd, onion, cucumber, coriander, salt, cumin powder and lemon juice.
  3. Mix gently without making the poha mushy.
  4. Heat ½ tsp oil. Add mustard seeds, cumin, curry leaves, green chilli and hing.
  5. Pour the hot tadka over the curd poha and mix lightly.
  6. Top with 1 tsp roasted peanuts and coriander.
