CHICKPEA AND TOFU SALAD
Ingredients
~1 cup soaked and cooked chickpeas
~50 gms tofu, cut into cubes
~1 cucumber, cut into cubes
~1/4 cup cubes celery (optional)
~1 tbsp pomegranate
~1 tsp salt
~Juice of 1 lemon
~Handful of peanuts or makhana
~Fresh coriander for garnishing
Makes 1 serving
Instructions
- Combine the chickpeas, tofu, cucumber and pomegranate in a bowl
- Mix together the lemon and salt. Pour over the salad. Sprinkle peanuts on top and garnish with
coriander
