CHICKPEA SALAD

Ingredients

~1 cup soaked and cooked chickpeas

~1 cucumber, cut into cubes

~1 cup salad leaves of your choice

~1/2 cubed tomato

~1 tbsp pomegranate

~1 tsp salt

~Juice of 1 lemon

~Handful of peanuts or makhana

~Fresh coriander for garnishing

Makes 1 serving

Instructions

  1. Combine the chickpeas, tomato, cucumber and pomegranate in a bowl
  2. Mix together the lemon and salt. Pour over the salad. Sprinkle peanuts on top and garnish with coriander.
