aloo curry :

Ingredients

  1. Potatoes: 2-3 medium-sized potatoes, peeled and diced
  2. Onion: 1 medium-sized onion, finely chopped
  3. Ginger-garlic paste: 1 tablespoon
  4. Tomatoes: 2 medium-sized tomatoes, pureed
  5. Spices: Turmeric, cumin, coriander, garam masala, and red chili powder
  6. Oil or ghee: 2 tablespoons
  7. Fresh coriander: Chopped coriander

 

Instructions

  1. Sauté onions: Heat oil or ghee in a pan and sauté chopped onions until golden brown.
  2. Add ginger-garlic paste: Add ginger-garlic paste and sauté for a minute.
  3. Add spices: Add turmeric, cumin, coriander, garam masala, and red chili powder(optional). Mix well.
  4. Add tomatoes: Add pureed tomatoes and cook until the sauce thickens.
  5. Add potatoes: Add diced potatoes and mix well.
  6. Simmer: Simmer the curry for 10-15 minutes or until the potatoes are coated with the sauce.
  7. Garnish: Garnish with chopped coriander.
