aloo curry :
Ingredients
- Potatoes: 2-3 medium-sized potatoes, peeled and diced
- Onion: 1 medium-sized onion, finely chopped
- Ginger-garlic paste: 1 tablespoon
- Tomatoes: 2 medium-sized tomatoes, pureed
- Spices: Turmeric, cumin, coriander, garam masala, and red chili powder
- Oil or ghee: 2 tablespoons
- Fresh coriander: Chopped coriander
Instructions
- Sauté onions: Heat oil or ghee in a pan and sauté chopped onions until golden brown.
- Add ginger-garlic paste: Add ginger-garlic paste and sauté for a minute.
- Add spices: Add turmeric, cumin, coriander, garam masala, and red chili powder(optional). Mix well.
- Add tomatoes: Add pureed tomatoes and cook until the sauce thickens.
- Add potatoes: Add diced potatoes and mix well.
- Simmer: Simmer the curry for 10-15 minutes or until the potatoes are coated with the sauce.
- Garnish: Garnish with chopped coriander.
