White oats poha

Ingredients
3 cups white oats
½ cup oat or wheat bran
1 medium, potato boiled and mashed
½ cup french beans fine chopped and blanched
½ cup mixed peppers red, yellow, green(optional)
1 medium onion fine chopped
2 Green Chillies deseeded and sliced
1 tbsp almonds or Peanuts roasted and crushed
1 tsp Ginger fine chopped
2 stems curry Leaves
½ tsp mustard & cumin seeds each
2 tsp channa dal (optional)
1 tbsp olive oil
2 tsp lemon juice
Salt & pepper to taste
Cilantro or fresh coriander leaves for garnish
Method
Roast white oats and bran until light brown and keep it aside. Heat oil in a non stick pan; add mustard seeds, cumin seeds and channa dal. Once they start sputtering, add ginger, green chillies and curry leaves. Stir and then add the onions. Once onions are translucent, add capsicums, beans and potatoes. Cover and let cook for 4-5 minutes on medium heat. Add the peanuts or almonds to the above mixture. Season with salt & pepper, finally add the roasted white oats & bran and combine. If the poha starts sticking to the pan just drizzle a little olive oil. (Add some water if required) at last add lemon juice and mix well. Garnish with cilantro and serve hot.
