6 chicken thighs or legs 2 sm. onion, chopped 1/2-cup mushrooms sliced 2 tbsp.low fat butter or olive oil 200 Gms tomato sauce made from fresh tomato Salt to taste/1 tsp fresh thyme 1-2 tsp. chili powder 1 tsp. dry mustard 1/4 tsp. coarsely black Pepper Method
Sauté onion and mushrooms in butter until tender. Stir in tomato sauce, salt, chili powder, mustard and pepper; simmer 5 minutes and keep it aside. Take a greased baking dish, put chicken in it and spread tomato sauce mixture on chicken. Sprinkle fresh thyme and Bake at 400 degrees for one hour or until chicken tender, basting occasionally, remove and serve hot.
