  1. 1 cup besan
  2. ½ cup dahi
  3. Salt to taste
  4. ¼ tsp ginger paste
  5. ¼ tsp green chillies paste
  6. ½ tsp citric acid
  7. Water to mix the batter
  8. ½ tsp baking soda
  9. ½ tsp red chilli powder
  10. ½ tsp rai
  11. 4to5 kadhi patta
  12. Hara dhaniya for garnish
  13. Idli stand greased



Mix together the besan, dahi, salt, ginger, chilli paste, and citric acid or vinegar. Add enough water to make a paste of drooping consistency. Leave for about one hour (for best results) gets the steamer ready. Gently mix in soda and transfer immediately to the greased tin. Sprinkle the red chili powder, rai and kadhi patta. Place the steamer, cover the steamer tin. Steam for 20 min. add remove from vessel, garnish and serve hot.
